Lemon Sautéed Snap Peas with Feta & Dill

Main Ingredients:

  • 3/4 pound fresh sugar snap peas

  • 3 tablespoons unsalted butter, divided

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon kosher salt

  • 2 ounces Nikos Feta cheese, crumbled

  • 1-1/2 tablespoons roughly chopped fresh dill

  • 2 teaspoons grated lemon zest, for garnish (optional)

  • Pinch red pepper flakes, for garnish (optional)

Ingredients

  • 3/4 pound fresh sugar snap peas

  • 3 tablespoons unsalted butter, divided

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon kosher salt

  • 2 ounces Nikos Feta cheese, crumbled

  • 1-1/2 tablespoons roughly chopped fresh dill

  • 2 teaspoons grated lemon zest, for garnish (optional)

  • Pinch red pepper flakes, for garnish (optional)

Directions

  1. Remove and discard the stem and string from each pea pod.
  2. In large skillet, heat 2 tablespoons butter over medium-high heat. Add peas and cook 4 to 5 minutes or until tender-crisp, tossing frequently.
  3. Add lemon juice, salt and remaining 1 tablespoon butter to skillet. Cook 1 minute; tossing frequently.
  4. Transfer peas to serving bowl and top with cheese and dill. Garnish with lemon zest and red pepper flakes, if desired.
