In a small food processor, combine all ingredients and process until smooth. Add more olive oil, a little at a time, as needed to produce a smooth and creamy textured dip. Serve immediately or place covered in the refrigerator for at least one hour to allow flavors to develop. Can be topped with a drizzle of olive oil and a sprinkle of fresh or dried oregano.
