Roasted Cauliflower with Canadian Bacon and Whipped Chipotle Feta

chipotle pepper in adobo sauce
cauliflower, broken into small florets
green onions, finely chopped
parsley, for garnish
Preheat oven to 400 degrees F.
In a food processor or medium bowl mix together feta, goat cheese, lemon juice, garlic and chipotle pepper. Blend until smooth and set aside.
Place cauliflower florets in a Ziplock bag. Add olive oil and massage well to evenly coat. Mix together Parmesan cheese, chili flakes and turmeric. Sprinkle evenly over cauliflower. Spread florets on a greased, foil-lined tray and bake for approx 20-25 minutes or until the cauliflower has started to brown. Remove from oven and place in a serving dish. Mix with Canadian bacon and green onions and top with spoonfuls of whipped feta. Garnish with parsley and serve immediately.
